Description

Castro Ventosa Mencía Valtuille is crafted from a selection of five distinct plots, each chosen for their unique soil composition and orientation. The aim is to create a wine that is elegant, approachable, and above all, true to the land, made with minimal intervention to preserve its natural expression.

The grapes are hand-harvested over a 15-day period, carefully timed to match each vineyard’s optimal ripeness. After harvest, the bunches are de-stemmed and placed in 5,000-liter stainless steel tanks, where natural fermentation occurs under controlled temperatures. The wine undergoes an extended maceration of 25 to 30 days, during which the cap is gently broken by hand once daily to ensure delicate extraction.

After fermentation, the wine is racked and pressed, then allowed to settle for one to two months before being transferred into 225-liter third-use barrels, where it ages for one year. The result is a refined and expressive Mencía, offering balance, character, and a deep sense of place.
