Description

  • Grape Varieties: 93% Sauvignon Blanc and 7% Sauvignon Gris.
  • Vineyard Area: 21 acres of clay slopes over limestone bedrock.
  • Farming: Under organic conversion since 2020, utilizing:
    • Poussard Guyot pruning for healthy vine development.
    • Traditional ploughing and sowing of cereals and legumes to promote biodiversity.
    • Integrated farming practices to ensure sustainability and environmental health.

Winemaking Process:

  • Pressing: Slow, cold pneumatic pressing to gently extract juice.
  • Settling & Aging: Juice is settled and aged for 9 months in a combination of oak barrels, tanks, and stainless steel tanks, all on lees with regular bâtonnage to enhance richness and texture.

This meticulous approach results in a refined, expressive wine that beautifully showcases the character of its terroir and the dedication to organic practices.
