Eric Fabre worked for eight years as Technical Director of Château Lafite Rothschild, where he received the highest awards. However, it was always a lifelong dream of his to own a vineyard on the Mediterranean.
Harvest – Two-months-long picking according to maturity of each varity. Grapes are hand-selected.
Vinification – Total de-stemming, juice is gravity-fed into vats, cleaned from bad lees twice, traditional temperature-controlled fermentation. Mourvèdre is directly pressed, Syrah and Grenache come from bleeding.
Ageing – Stirring on the fine lees in concrete vats during 3 months. Light fining for stabilisation.
