This wine is sourced from parcels in Rorschwihr, where the vines are rooted in a mosaic of clay, marl and limestone. The village is renowned for its remarkable geology, with all 21 known limestone types present in its soils and an equally intricate subsoil structure. Monks first recognised the quality and distinctive microclimate of these sites more than 400 years ago, and some of their traditional practices still guide work in the vines today. Tasks in the vineyard are scheduled according to lunar and stellar rhythms, and the decision to harvest is based on the flavour and physiological ripeness of both pips and skins. The vineyards are farmed using organic and biodynamic methods, though they are not formally certified.
