Rolly-Gassmann cultivate 5.67 hectares in the Kappelweg de Rorschwihr lieu-dit, a site that effectively behaves like a Grand Cru, even if it does not carry the title officially. The vines grow at 220–235 metres above sea level on very old blue-grey marl-limestone soils, which contribute to the wines’ lively acidity and impressive depth of flavour. The vineyards are managed according to organic and biodynamic principles, although they do not hold formal certification.
