Domaine Rolly Gassmann’s Pinot Gris Vendanges Tardives is a late-harvest dessert wine made from very ripe, often botrytised Pinot Gris grown on limestone-rich clay and marly soils around Rorschwihr. Picked at high natural sugar and fermented slowly with indigenous yeasts, it is typically deep golden in colour, with intense aromas of dried apricot, quince, candied citrus and honey. The palate is richly sweet and unctuous yet balanced by fresh acidity and a distinct mineral edge, giving a long, complex finish. This cuvée is well suited to foie gras, blue and washed-rind cheeses, fruit tarts and other richly flavoured desserts, and has excellent potential for long-term cellaring.
