The Hungarian word “aszú” originally meant “dried,” but over time, it became synonymous with the world-renowned Tokaj Aszú, a sweet wine made from botrytized grapes in the historic Tokaj region. This wine, celebrated across Europe for centuries, was famously adored by King Louis XIV, who called it the “King of Wines, and Wine of Kings.”

The Traditional Aszú Winemaking Process

  1. Hand Selection: Aszú berries are individually picked at peak ripeness.
  2. Maceration: The grapes are collected in vats and trampled into a thick paste known as aszú dough.
  3. Fermentation Initiation: Must or wine is poured over the aszú dough and left to soak for 24–48 hours, with occasional stirring.
  4. Aging: The mixture is transferred into wooden casks, where fermentation continues slowly. Stored in a cool environment and left slightly open, the wine matures over several years, developing deep complexity.

Traditionally, the concentration of aszú was measured by the number of puttony (baskets of aszú paste) added to a Gönc cask (a 136-liter barrel) of must. Today, only 5 and 6 Puttonyos Aszú wines are permitted under Tokaj regulations, ensuring the highest quality and authenticity.
