Kabar is the sixth officially registered grape variety permitted in the Tokaj appellation. Developed in Tokaj in the 1970s as a cross between Hárslevelű and Bouvier, it was initially known as T10 before being officially authorized for use in the region in 2006.
This unique variety has a low yield, ripens early, and develops high sugar levels, making it well-suited for dry and sweet wines. It is also prone to botrytis, a key characteristic in Tokaji dessert wines. Thanks to its thick skin, Kabar is resistant to late autumn rains, making it a reliable choice for winemakers in the region.
