This Riesling Cuvée Yves comes from various vineyards within the Rorschwhir village. It is a selection from the best barrels of that year.
Harvested at optimum ripeness, Rolly Gassmann lets the fruits ripen until the pip has become brown in color before harvesting. It is a tradition for Rolly Gassmann to be one of the last estates, if not the last, to harvest in the region. As a result, producing rich wines that will age particularly well. Traditional vinification, with 12 to 15 hours gentle pressing before
fermentation takes place using wild yeasts. Fermentation lasted several months, after that the wine rested on its lees. Bottled
11 months later, just before the next harvest begins.
