Grapes are harvested at optimum ripeness. Each variety and vineyard is vinified separately to preserve each terroir’s identity. The grapes are first cold macerated to extract the fruity aromas. Fermentation is done in temperature-controlled tanks over 18 to 25 days. The wine is then macerated for four days to enhance the body and structure. Lastly, malolactic fermentation is completed to add a silky and smooth finish to the wine. It is aged further in stainless steel tanks before bottling.
