To ensure the highest quality, samples of grapes are carefully taken and tasted to determine the optimal time for harvest. Once selected, the grapes undergo pressing with a meticulous selection of the must. The must is then cold-stabilized and racked to extract the finest aromas. Fermentation occurs at a lower temperature, preserving delicate flavors, followed by three months of maturation on the lees to develop a rich, rounded taste. Finally, the wine is filtered, blended, and bottled, producing beautifully balanced and aromatic wine.
