Vinos del Viento Aventura White is a high-elevation field blend of 85% Viura, 5% Verdejo, 5% Moscatel and 5% Viognier, sourced from stoney clay canto rodado soils at around 600 m. The grapes are hand-harvested, de-stemmed and co-fermented in concrete with indigenous yeasts, then aged on fine lees in concrete. Biodynamically vinified and bottled unfined and unfiltered, it shows a pale lemon colour with intense aromas of white flowers and tropical fruits, especially pineapple and passion fruit. The palate is fresh and expressive with a gently rounded texture, making it a versatile match for gambas al ajillo, bright salads, Vietnamese spring rolls, glass noodle dishes, fish tacos and pasta primavera.
