Vinos del Viento “Rosé of the Winds” is a dry Garnacha rosé from Campo de Borja, Aragón (Spain), made by Michael Cooper from 100% old-vine Garnacha grown at around 500–700 m on poor, stony clay-limestone soils. The grapes are hand-harvested, whole-bunch lightly pressed and only the free-run (“saignée”) juice is used, then fermented and aged for several months on fine lees in concrete/stainless steel, usually bottled unfined and unfiltered. In the glass it’s a pale, delicate rosé with floral and red-berry aromas, touches of pomegranate, white plum, dried flowers and a subtle almond / mineral note; the palate is dry, smooth and almost light-red in texture, with juicy redcurrant, raspberry and citrus (blood orange) notes, bright acidity and a lightly smoky, spicy finish at about 13% ABV.
